Gluten-Free Applet Carrot Flax Muffins

Our family loves these muffins. They are full of fiber and a good source of protein. They have no refined sugar and there is a dairy free option. They are great as a snack or a quick breakfast. They can be frozen and used as needed.

Ingredients 

  • cup All-Purpose Baking Flour - Gluten Free, I use Bob's Red Mill 1:1 GF Mix
  • ¾ Cup flax meal, I use Bob's Red Mill golden flax meal
  • ½ Cup Oats , gluten free quick oats
  • 1 Tbsp Baking Powder
  • ½ tbsp Salt
  • 1 tbsp Cinnamon
  • ½ Cup Honey
  • 2 Eggs
  • ½ Cup Oil, I use avocado oil from Chosen Foods
  • ½ Cup Milk, Can also use unsweetened Almond Milk
  • 1 Cup Carrots , About 2 large carrots grated
  • 1 Cup Apples , About 1 large apple grated
  • ½ Cup Raisins, Optional

Instructions 

  • Preheat oven to 350 degrees
  • Combine all dry ingredients in a large bowl.
  • Grate carrots and apples. Add remaining ingredients to bowl and mix until well combined.
  • Grease a 12-count muffin pan with non-stick spray.
  • Evenly divide batter between 12 muffin cups.
  • Cook for 20-25 minutes until top middle of muffin is springy to touch.
  • Remove muffins from muffin tin and let cool.
  • Enjoy!
