Everyone loves this granola. It is simple to make and tastes great. It is hard to find organic granola and if I do, it is very expensive. I use organic oats and no refined sugar.

This recipe is lower in fat and sugar than most granolas. It’s great as a topping on yogurt, as a cereal with added almond milk, or great just eaten all by itself.

Gluten-Free Cranberry Nut Granola

Ingredients 

  • 3 cups oats, gluten free whole oats
  • 1 ½ cups almonds, almond slivers or chopped pecans
  • ¼ cup maple syrup
  • 2 Tbs honey
  • 1 cup coconut, shredded
  • 1 cup Dried Cranberries
  • ¼ cup Flaxseed Meal, I use Bob’s Red Mill Golden Flax Meal
  • ¼ cup Avocado Oil, I use Chosen Foods
  • 2 Tbs Butter, Organic
  • ¼ tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Vanilla

Instructions 

  • Preheat oven to 250 degrees.
  • In a large mixing bowl mix all ingredients, except cranberries, until well combined.
  • Line two sheet pans with parchment paper.
  • Spread mixture out evenly between both sheet pans.
  • Put in the oven. Set a timer for 15 minutes. Stir granola every 15 minutes for 1 hour.Do not over bake. Granola should be light brown.
  • Remove from oven when done baking. Let cool completely.
  • Add dried cranberries after granola has cooled.
  • Store in a sealed container for 3-4 weeks.
