  • 3 cups Cooked Quinoa
  • ¾ cup kalamata olives, pitted and cut in half
  • 1 cup red bell pepper, diced
  • ½ cup purple onion, chopped finely
  • 1 cup cucumber, chopped into small pieces
  • 1 cup feta cheese, crumbled
  • 2 Tbs balsamic vinegar
  • 2 Tbs olive oil, extra virgin
